After moving to NYC, I took a sabbatical from financial work and joined a values-driven butcher shop focused on ethical sourcing and sustainability. I worked across operations, customer engagement, and logistics — gaining hands-on insight into labeling policy, supply chain traceability, and community-scale systems. It shifted how I think about infrastructure and care.
